Chicken Tandoori Meatball Sub

Ingredients:

  • 6-8 Italian bread

  • Shredded mozzarella cheese

  • Cilantro for garnish


Chicken Meatballs:

  • 2 lbs ground chicken

  • 1 tbsp green chilies

  • 1 ½ tbsp garlic

  • ½ tbsp ginger

  • 1 tbsp red chili powder

  • ½ tsp coriander powder

  • ½ tsp cumin powder

  • ½ tbsp garam masala

  • 1 ½ tbsp tandoori masala

  • ½ tsp black pepper

  • Salt to taste

  • 4-5 tbsp oil

  • Breadcrumbs, for binding (optional)


Gravy:

  • 15-20 cashews

  • 2-3 bay leafs

  • 1 cinnamon stick

  • 3 whole cardamom

  • 6-8 whole black pepper

  • 2-3 whole dried red chilies

  • 1 star anise

  • 5-7 cloves

  • 4-5 medium tomatoes, cubed

  • 2 red onions, cubed

  • 1 tbsp green chilies

  • 1 tbsp garlic

  • ½ tbsp ginger

  • 3-4 tbsp oil

  • Salt to taste


Method:

  • In a bowl take ground chicken and add green chiles, garlic, and ginger. Add all the spices and mix well.

  • Take a ½ cup ice cream scoop to take out the mixture and roll into balls with your palms. Place them on wax paper to avoid sticking.

  • In a non-stick pan add oil and heat on medium heat. Once heated, put in meatballs and cook for 2-3 mins on both sides. It should take around 7-10 mins to fully cook.

  • Once the meatballs have browned and cooked properly remove onto a tray or dry paper towel to remove excess oil.

  • Set aside.

  • In a non-stick pot add oil and heat on medium flame. Add in cashews, all whole spices and cook for 5 mins until fragrant. Once the spices have cooked add the onions and a little salt to cook faster.

  • When the onions have softened, add in tomatoes and cook for 15-20 mins or until everything has softened.

  • Take off heat and set aside to cool.

  • Once cooled add into a blender and blend till smooth. Add water if needed.

  • In the same non-stick pot add oil, green chilies, garlic, and ginger and cook till fragrant. Add the gravy in and put in meatballs one at a time. Slowly mix trying not to break the meatballs.

  • Split open the rolls and spread gravy on both sides. Top each roll with 3-4 meatballs and top with mozzarella cheese. Broil the sandwiches until the cheese has melted.

  • Garnish with cilantro and serve hot!!
