Mini Chai Tiramisu




As an avid coffee person myself, I wanted to attempt and put a twist on an Italian classic, the Tiramisu. Though I never have had chai myself (yes I know it sounds wrong), I wanted to bake something that I know I couldn't burn (and i've burnt ALOT of baked goods). This dish encompasses not only the right amount of spice but also the essence of sweet without it being over-sweet.


Ingredients:

  • 20 Ladyfingers

  • 1 cup mascarpone

  • ¼ cup sugar

  • 1 tsp vanilla extract

  • 1 cup heavy cream

  • 1 cup water

  • 5-6 tbps chai powder

  • 2 tbsp cocoa powder


Method:

  1. In a mixing bowl add mascarpone, sugar, and vanilla extract and mix well. Set aside.

  2. In another mixing bowl add the heavy cream and whip until firm peaks are formed. Once whipped add the heavy cream into the bowl with mascarpone.

  3. Mix well and make sure no lumps are visible.

  4. In a saucepan add water and chai powder and let it come to a boil stirring continuously. Take off the stove once done and let cool.

  5. Pour out the chai into a shallow baking dish to use to dip ladyfingers in.

  6. Take one lady finger at a time and soak it into chai and then remove it.

  7. Make a layer of the lady fingers into the mini cups and then spread a thin layer of mascarpone mixture.

  8. Repeat until you fill it and then sprinkle cocoa powder on top.

  9. Place the cups into the refrigerator for 5-8 hours or overnight.
