Ingredients:
To make fresh fries:
4 Potatoes (thinly sliced)
Oil (enough to fry)
To make the rosemary oil:
2 tbsp Rosemary (finely chopped)
Salt to taste
¼ tsp Black pepper
4 tbsp extra virgin olive oil
Method to make fries:
Cut potatoes into thin slices and place them in cold water for about an hour.
Once the hour is up, rinse the fries 2-3 times under cold water and place it on a clean kitchen towel to pat dry. Make sure the potatoes are completely dried.
In a pan add enough cooking oil to fry the potatoes and heat it up to 350 degrees F on a medium flame.
Add the fries in batches to fry properly. Fry half way and remove them into a paper towel to remove excess oil.
Then increase the heat to high flame and fry the batches for a second time till golden brown color and fully cooked.
Remove and place on a paper towel to remove excess oil once again.
In a mixing bowl add in the oil, rosemary, salt, and black pepper and mix well. Add the fries and coat the fries evenly and fully.
Spicy Ranch Sauce:
½ cup ranch ( I prefer Wish-Bone brand)
2 tbsp hot sauce (Frank’s RedHot brand)
¼ tsp garlic powder
Method:
In a bowl mix together ranch, hot sauce, and the garlic powder. Enjoy with the fries.
