Ingredients
1 box (16oz.) rigatoni pasta
1 head garlic, peeled and sliced
1 medium red onion, diced
4 tbsp red pepper flakes
½ cup tomato paste
½ cup pasta water
1 cup heavy cream
¼ cup grated parmesan cheese
2 tbsp parsley, chopped
½ tbsp black pepper powder
Salt to taste
Instructions
In a pot cook pasta according to instructions on the pasta box.
In a non-stick pan, add extra virgin olive oil and garlic. Cook until fragrant on medium flame and add onions. Cook onions for 5-7 mins or until translucent and add the crushed red pepper flakes and salt.
Once the red pepper flakes cook, add tomato paste and mix well. Let the tomato paste cook for 5 mins and then add in the pasta water stirring continuously.
When everything is mixed well slowly add heavy cream mixing it well.
When the sauce thickens and is at a consistency you like, add the cooked pasta.
Mix everything and grate fresh parmesan cheese on top. Add fresh chopped parsley on top.
Serve and enjoy!
