Sponge Cake with Strawberry Coulis


Ingredients 

1 box Pillsbury yellow cake mix (15.25oz)
2 packs of fresh strawberries (2 lbs.) 
1 cup granulated sugar 
1 tbsp lemon juice 
Fresh Strawberries, sliced (for garnish) 

Instructions 

  1. Make cake as per box instructions and set aside to cool. 

  2. In a sauce pot add fresh strawberries, granulated sugar and fresh lemon juice and bring to a boil. 

  3. Once it bubbles and strawberries turn soft and break apart, use an immersion blender and blend into a smooth sauce. 

  4. Let the strawberry coulis cool and transfer into a glass mason jar. 

  5. Take a slice of yellow cake and drizzle the strawberry coulis on top with fresh strawberries. 

  6. Enjoy!
